
Bison Meatloaf

This delicious bison meatloaf is sure to have everyone coming back for more!

Ingredients
1 lb ground bison meat
1/4 cup breadcrumbs
1/2 beef broth
1 egg - beaten
1/4 cup diced onion
1/4 cup Parmesan cheese - shredded
1 Tbs tomato paste
3 tsp Worcestershire sauce
1 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
1/4 tsp onion salt
1/3 cup ketchup
2 Tbs balsamic vinegar
1 Tbs brown sugar

Preheat oven to 350°

In a large bowl, combine ground bison, bread crumbs, beef broth, egg, onion, parmesan, tomato paste, Worcestershire, and seasonings. Work it all together until all of the ingredients are well blended.

In a separate small bowl, combine ketchup, balsamic vinegar, and brown sugar to make the glaze.

Brush 2 Tbs of the glaze mixture in the bottom of a bread pan, and then set the meat mixture on top and press it in to form a loaf that is 2"-3" thick. Then spread the remaining glaze mixture on top of the meatloaf.

Bake the meatloaf in the oven for 40 minutes or until the internal temperature reaches 160°.

Sprinkle with shredded parmesan cheese and serve.
